Curd VS yogurt: Which one is healthier and why?
Curd and yogurt are often assumed to be the same, a source of probiotics that improve gut health and digestion. But turns out, they are both different dairy items – while ccurd is made by allowing milk to ferment naturally with the bacteria present in the environment, yogurt is made by intentionally introducing bacterial strains to milk – most commonly Lactobacillus bulgaricus and Streptococcus thermophilus.
But apart from that, in terms of nutrition and health benefits, how are yogurt and curd different? Read on to find out.
In an interaction with News9Live, Mayuri Rastogi, Assistant professor of Nutrition and Dietetics Department – Sharda University, spoke about the difference between yogurt and curd.
What is the difference between curd and yogurt?
“Many people use the phrases “curd” and “yogurt” interchangeably since they are two extremely similar dairy products. On the other hand, minor variations could exist based on the cultures and processing techniques employed. Probiotics are good bacteria that aid in digestion and intestinal health, and both curd and yogurt are generally high in them. They also include minerals, vitamins, calcium, and protein. Overall health and well-being are enhanced by these nutrients,” said the expert.
The difference between curd and yogurt primarily lies in their preparation methods and the cultures used. Curd is typically made by curdling milk with an acidic substance like lemon juice or vinegar. It’s often made at home and can vary in texture and taste depending on the method and culture used. Yogurt, on the other hand, is made by fermenting milk with specific strains of bacteria, typically Lactobacillus bulgaricus and Streptococcus thermophilus. This fermentation process gives yogurt its characteristic texture and tangy flavor.
In terms of health benefits, yogurt is rich in probiotics, proteins, vitamin B5, and potassium, and hence aids in blood pressure, maintains good gut health, and promotes weight loss. However, curd improves digestion, as the nutrients are absorbed rapidly and prevent peptic ulcers. Furthermore, curd is rich in calcium and phosphorous, and improves bone health.
Thus, both curd and yogurt are healthy, depending on consumer preferences and health goals. Although, yogurts are available in various versions and flavours, that make them more consumer-friendly than plain curd.
