Saransh Goila’s Palak Khichdi Is The Low-Carb Lunch You Need

Trust Saransh Goila to switch up a simple homely recipe to make it healthier and more interesting. The chef recently took to Instagram to share his recipe for Palak khichdi, a hearty, khichdi made with homemade palak puree.

The chef who is best known for his signature butter chicken loves updating simple desi recipes to make them more interesting and heartier.

He shared on Instagram that he first experienced this green khichdi at Sanjeev and Alyona Kapoor’s office, almost a decade ago. “One of my fav khichdi recipes since I first had it in @sanjeevkapoor @alyonakapoor office in 2013. It’s a very basic recipe and gets even better (if you add some scrambled anda to it)” he wrote on Instagram.

The USP of the dish is the fresh palak puree which can easily be made with a blender; Goila also uses mint, coriander and chillies along with palak to make a smooth paste.

Adding veggies to khichdi is an easy way to make it healthier. Spinach is rich in antioxidants, which help neutralise free radicals in the body and may reduce the risk of chronic diseases. Besides, the low glycemic index of lentils and the fibre content in palak khichdi may help in stabilising blood sugar levels, making it a suitable option for anyone with diabetes.

Moreover, the combination of rice and lentils provides a balanced mix of complex carbohydrates and proteins, which can help in maintaining a steady release of energy and keep you feeling full for longer.

Palak khichdi has some great health benefits and may also be a part of a healthy diet. Here are some of its health benefits:
